chocolate crackled biscuits

Crackled Chocolate Cookies (from the Cuisine magazine)


150g flour
60 g cocoa
1 tsp baking powder
pinch salt
200 g caster sugar
60 g butter (cold and diced)
2 eggs, lightly beaten
1 tsp vanilla
Icing sugar to coat

Preheat the oven 200 C and line two baking trays with baking paper.

Sift flour, cocoa, baking powder, salt and sugar into a large bowl. Rub the butter into the flour mix until it resembles bread crumbs.

Whisk the egg and vanilla together then stir into the flour mix with a large spoon. Put into the fridge for 30 mins then roll into walnut sized balls and toss in the icing sugar. Place onto the baking trays but don't flatten. Bake about 10-12 mins. Cool for 5 mins on the baking tray then remove to totally cool on a wire rack.

here is a resipe to how to make cupcakes!!! Chocolate Angel Food Cupcake Recipe Everyone I know loves the light airy taste of angel food cupcakes, and they like it even more when you combine that light airy taste with chocolate. These chocolate angel food cupcakes are delicious plain or you can top them with a chocolate glaze or strawberry preserves for added flavor. Ingredients• 1 cup flour • 2 cups sugar • 1/2 cup baking cocoa (powdered) • 1 teaspoon baking powder • 1 teaspoon cream of tartar • 1/4 teaspoon salt • 1/2 teaspoon lemon juice • 1 teaspoon vanilla extract • 1 1/2 cups egg whites (from approximately 10 large eggs) • 1 teaspoon vanilla • 1 teaspoon red food coloring Chocolate Angel Food Cupcake Recipe DirectionsPreheat oven to 325 degrees. Combine egg whites with salt, and beat until foamy. Add cream of tartar, and continue to beat until stiff. Stir in sugar, lemon juice, and vanilla. In a separate bowl, stir together flour, cocoa, and baking powder. Fold flour mixture into egg whites gradually. Spoon batter into cupcake liners until 1/2 full. Bake for approximately 20 minutes or until a toothpick inserted in the center comes out clean. Cool cupcakes completely in pan. cupcake Tip: Buy the best cocoa powder you can afford. The cheaper cocoa powders require more sugar to taste really good. I really like Trader Joe's organic cocoa powder. It's somewhat inexpensive and tastes great. If you can afford something more expensive, then go for it. A really good cocoa powder makes all the difference with these cupcakes.
